Farmhouse Signs around the Web


I was talking about cute decorative signs the other day, as I read that too many words on the walls can feel like you are being shouted at.  However, as these posts show, it can be tastefully done, promoting a relaxing vibe instead of a scolding one ;).

gluten free Ranch Chicken nuggets (RECIPE)

4 chicken breasts
2 C buckwheat flour or oat flour (I made mine in my vitamix)
4 T ranch dressing mix powder
4 egg whites


Cut the chicken into tiny nugget size pieces.  Dry, and then dip into egg white, and then into flour mixed with ranch powder.  Fry in hot oil for 1-2 minutes per side.  If your chicken pieces are bigger increase cooking time.

These are good dipped in straight sour cream or ranch dressing.

Gluten free Chicken Alfredo (RECIPE)


Boil package of Tinyada gluten free pasta

Saute 4 chicken breasts in coconut or olive oil with 2 t parsley, 1 t black pepper, 2 t salt.

As soon as pasta is done and drained, add 1/2 t olive oil to the cooked pasta.

Add pasta to chicken.

Make sauce in a medium saucepan:

1 8oz block cream cheese
1 cube butter

Let those melt down together on medium heat.  When about halfway melted add 1/2 C milk, and then whisk until there is no lumps.  After its melted, add 1/2 C grated parmesan (in the can) and 1/4 C shredded mozzarella.  As soon as this cheese is melted in add 1 t garlic powder and 1 t black pepper.  Serve over pasta and chicken.

Lemon Curd (RECIPE)



Lemon Curd

1 C sugar
2 T cornstarch
6 T lemon juice
6 T water
6 egg yolks
1/2 C butter

Put sugar and cornstarch in saucepan.  Stir in lemon juice and water.  Stir half of mixture in to egg yolks.  Put that back into saucepan and bring to a boil and then cook for 2 minutes.  Remove from heat and add butter.

Gluten Free Pancakes



There are plenty of mixes out there, and these can be made with GF flour mix...but in our family I prefer feeding whole grains to my kids as often as possible, for the fiber and the way it slows down blood sugar surges.  Especially first thing in the morning and with the accompaniment of syrup, I find it helpful!

Gluten Free Pancakes

3/4 C oat flour

1/2 C buckwheat flour

2 t baking powder

1 t salt

1 T sugar

1 egg

2 T canola oil

1 C milk

(Makes the amount seen in the picture, plus a couple more than that)

Hot Cocoa (big batch)


Note:  The kids told me they prefer our older recipe.  Click HERE if you'd like that one.


11 C dry milk
2 lb can of Nestle Nesquik
11 oz powdered coffee creamer
1 C powdered sugar
1/4 C baking cocoa
Small box instant chocolate pudding

Store in an airtight container.

Mix 1/3 C mix with hot water and enjoy.<3 p="">

Fudgy Brownies RECIPE (oat flour)



Fudgy Brownies

1/2 C butter (1 cube)
1/3 C cocoa
1/3 C sugar
1 egg
pinch of salt
1/2 t vanilla
1/2 t baking powder
1/3 C oat flour (I make by putting old fashioned oats in the blender for a few minutes)

Melt butter and mix the rest together.  Bake in a greased, small pan.  Bake at 350 degrees for 15 minutes.
