"Whatever you Have" Nachos





One day, around noon, we returned home after swimming lessons and everyone was hungry.  We usually just throw together sandwiches, but my oldest daughter noticed the half full bag of corn chips in the pantry and said, "Let's have nachos."  We had shredded cheese in the freezer  (two kinds!), so I told her to look through the pantry for other toppings.  She came up with olives and kidney beans.  We dipped these in salsa and it made quite a satisfying lunch.

I also whipped up a batch of homemade lemonade.  We've really been enjoying that this summer.  It tasted great with the little fiesta meal we had going on here :).

If you had chips and frozen shredded cheese on hand you could top these with whatever was in your fridge and pantry.  Here are some ideas:


  • Leftover ground beef 
  • even leftover cooked hamburger patties torn up
  • refried beans
  • black beans
  • chunks or shredded chicken
  • pulled pork
  • lettuce
  • spinach leaves
  • tomatoes
  • sour cream
  • plain greek yogurt (like a sour cream subsitute)
  • green onions
  • chopped onions
