Flour Tortillas
This recipe is for super soft homemade tortillas. They are really soft and stay that way hours later. Most of the homemade ones I have made get a little too crispy and don't fold well. This recipe solves that problem. How? Some real fat. Yep. I swear by REAL butter and real foods in general whenever possible. I think fat is a healthy part of our diet. Here they are. Enjoy!
FLOUR TORTILLAS
4 C Flour
3 t baking powder
2 t salt
1 cube butter
1 1/2 C water
Mix dry ingredients. Cut butter in with a pastry cutter (like making pie crust). Add water to form dough. For into small balls. Let rest for 10 minutes, then roll into super thin circles (Rolling them as thin as possible is really key. They puff while cooking.) and cook on a hot oiled cast iron skillet. Flip them when they start to bubble. Cooking them very quickly will keep them soft and if you've rolled them thin enough there is little chance they'll be doughy.
