1 1/2 C chicken breast
2 1/2 C quinoa
1 can black beans
1 onion
2 C enchilada sauce
1 C pepper jack cheese
1/2 C sharp cheddar cheese
1 C sour cream or plain greek yogurt
2 T olive oil
1 T chili powder
Heat oven to 350. Spray baking dish with cooking spray. Cook onion in oil over medium heat 5 min, reduce heat to low. Add quinoa, chicken, black beans, green chilies, chili powder and enchilada sauce, stir to combine and remove from the heat. Stir in cheddar cheese. Transfer to baking dish and top with pepper jack cheese. Bake 10-15 minutes. Turn oven to broil and broil 1-2 minutes. Serve topped with sour cream, avocado and cilantro, and maybe some salsa on the side.
