I came up with this recipe this morning, because pumpkin muffins are my theme for the fall.
Literally every fall.
So here is this year's version, low carb style:
Keto Pumpkin Muffins
8 Eggs (yes, for real)
1 can pumpkin puree
1 cube butter melted, and then cooled
2/3 cup granulated sugar substitute (or sugar if you are into that ;))
1 T vanilla extract
1 T cinnamon
1/2 C coconut flour
2 t baking powder
Blend the way you prefer (they work great in a vitamix and then poured into the cups to bake). Bake at 350 for 20 minutes. OH, PS they stick to the pan pretty strongly, use sprayed muffin liners or a freaking lot of grease/spray.
